When to Book??

I am trying to figure out when to book DP for November....We will be booking using airmiles with Air Canada Vacations. I have been watching the rates since January and nothing has changed. We were going to wait as long as possible to book so we can keep collecting airmiles which lowers the package price..BUT...I see that there is a special on until May 6 for room rates from Sept - Dec. I'm wondering if I wait until after May 6 if the Air Canada prices will go up? We can get 8 nights for 4988. including taxes with a good flight. Can anyone give any opinions about the rates?

Just as an example if you booked a Westjet direct flight out of Toronto for Mid Nov
Westjet direct YYZ>CUN mid week 8 night pricing for 2 = $1281 CAD includes fees and taxes

Then Desire Pearl 8 night OV promo pricing = $3,366.40USD

So you are at roughly $ 4800 - use your AC miles to get and pay for your flights down to Toronto and back home

OR

Through Expedia CA a package deal, mid week from where you live via Toronto and then direct to Cancun for the two of you at Desire Pearl 8 night OV
would cost you right now $4,742.72 CAD (basically the same deal as AC and they are all AC flights but saves you a couple of hundred on virtually the same package..... )
